Please tell us about your relationship.

Toba:It all started when I asked (Nagasaka) Tsune to work on an ongoing project. I like architecture, and I like the way you value materials in your architecture. We also happened to have a chance to have dinner together in private, and we had a lot of fun together.

Nagasaka:I am surprised to be the first partner in the Series, but I am honored.

Toba:I think it is very stimulating to be able to listen to the sensibilities of people who create things in other genres. The act of thinking about such people and creating customized dishes for them leads to my personal growth as well. The most minimalistic and primitive way to cook is to have a partner and cook for that person. I make a lot of different kinds of food, but I really like and look forward to returning to my roots and cooking for one person in a simple way.

Nagasaka:I am an architect, but I am also a chef, or perhaps an architect who creates in the manner of Mr. Toba. Generally speaking, architects tend to be a bit reserved in their approach, but I am inspired by the people and places I encounter. There is a sense that encounters and making things are linked, which is similar to what Mr. Toba said about making something for someone else. Rather than creating something from 0 to 1, I think the sense of creating something that already exists and then talking about what you felt there is similar to that of cooking.

Toba:That's right. For example, if someone does not like pak choi, instead of saying that this dish must contain pak choi, you can use mint instead. I feel that this is very similar to the process of imagining what the other person wants and then making the dish. I always thought that there is a great affinity between the recipe and the blueprint that leads to completion. That's why I asked Tsune-san to do the first installment.

Do you like good food?

Nagasaka:That's it. The only thing I enjoy when I am traveling for work is eating. It's about the level of research I do on the Internet, but it's quite a pleasure to know what I'm going to eat for lunch and dinner.

Toba:In my case, I like to eat, but I am rarely particular about what I eat. I am not so much interested in what I eat, but prefer to cook for others, as in this case. I guess I'm just constitutionally built that way.

Toba:I knew about biryani, but I had never made it before. I thought it would be better to know the historical background of biryani than to simply make it, so I looked it up and learned that it was originally an Iranian dish and one of the world's three most popular cooked rice dishes. I found out that it is one of the three major cooked rice dishes in the world, originally from Iran. I have seen many ways to make biryani, but I have never had an official biryani myself. So today, I would like to share my own idea of biryani (laughs).

Nagasaka:I haven't eaten it that many times myself. You have heard a lot about biryani recently, haven't you?

Toba:That's right. But I think it has a lot of potential as a complex food, with this spiceiness and herbs such as pak choi and mint. I made a prototype the day before yesterday, and it was so delicious that I wanted to make it the main dish at the next event. That is why I decided to make this recipe with ingredients that can be prepared at home, with the hope that Tsune-san can make it at home. I chose to use chicken because it is the most traditional of all, and I wanted to start with a basic biryani and work my way up to the next level. I created a recipe as a blueprint for that purpose. If you compare it to architecture, it is very important to have a blueprint before construction. So I did a lot of simulations (laughs).

Toba:That's right. I thought it would be nice to make my own version of a recipe that was made for me, so I feel like I am giving the recipe to Tsune-san as a gift. In the end, I would like to have Tsune-san add canned mackerel or make other arrangements, so that recipes made by others become my own recipes.

Nagasaka:I like to make curry. I have been too busy lately to make curry, but I do prepare it by myself by gathering spices and frying them. I find that sauteing onions in particular calms me down mentally.

Toba:I had heard that you like curry, so I thought it would be nice to have something I could make. So, let's get started (but the conversation continues as we work).
